The tradition of roasting styrian pumpkin seeds started in 1697 to produce a distinctive dark green oil.
Today, not much has changed. Undamaged seeds are hand sorted and selected for small batch roasting, but without burning, to produce a deep nutty flavour that avoids all bitterness.
From there the seeds are cooled and cold pressed at low temperature to preserve fatty acids and nutrients like vitamin E.
